Merroir is a term used to describe the taste of an oyster, which reflects the marine environment where it grew, just like the term Terroir describes the flavour of wine based on where the grapes are grown.
The Oyster Synth is a custom synthesiser that was made for the River of Art exhibition at the Narooma Oyster Festival in 2025. The aim of the synth was to draw attention to the importance of the marine environment, and protecting the pristine ecosystems of the South Coast of NSW.
Oyster Synth Instructions
1. Tune the marine environment by turning the parameterknobs to new positions.
2. Press the red button to sample the Sonic Merroir of the Oyster Synth
3. Savour the sound and reflect on how the changes in texture, movement and timbre might relate to aspects of the Oysters in their environment, such as salinity, acidity, sediments, temperature, tidal flow, pollutants and so on.
4. Cleanse your aural palette by pressing the red button and listening to silence.
5. Repeat. The recommended Serving is 6 samples.
The Sonic Merroir may be paired with the Terroir of a glass of fine wine :)
